Life was a little crazy this past week with getting the kids settled into their new remote-learning school routines. But we seem to be at a point where I can be more hands off, which means more time for cooking and baking and blogging, oh my!
The recipes for today are Salmon Croquettes and Walnut and Fig Ice Cream. The Salmon Croquettes recipe from The Good Housekeeping Woman’s Home Cook Book 1909 was incredibly vague when it came to amounts for seasoning, as in all it said was to add them. I guessed incorrectly and ended up with very spicy Salmon Croquettes. If that’s your thing, then go for the heat. For me, it was a bit too much so I lowered the amounts for the recipe.
The Walnut and Fig Ice Cream was very easy to make (no ice cream machine required!), ready relatively quickly, and the kids enjoyed it as much as store bought. The fun fact I learned during this process is that in 1909 refrigerators like we know now were not a thing. I know, I know, this was 111 years ago, but for some reason I can’t grasp how different it was then. It wasn’t until 1915 that the first refrigerator for home use was built, and even by 1955 only 80% of households had one.
