Today’s recipes are inspired by the last few days of relaxed summer mornings, before the rush of getting ready for school makes more detailed breakfast recipes impossible. Contributed to the 1909 The Good Housekeeping Woman’s Home Cook Book by Mrs. Grace E. Dutton of Pasadena, the first recipe is her “Favorite Omelet.”

The “Favorite Omelet” isn’t what I’d consider an omelet now-a-days. The eggs are the star of this dish, and it’s dishes like this that make me so happy to have fresh eggs from our chickens. I highly recommend getting the freshest eggs possible whenever you can. It does make a difference.

To accompany the omelet, I have the Chocolate Cream Nectar, made with chocolate, coffee, and sherry (come back Friday for a shrimp recipe that also uses sherry). Yes, please! Sweet, rich, and iced, this is the perfect drink for the end-of-summer vibes going on right now.
