When I made this, I followed the instructions as they were written, and the salad was a bit bland. The only seasoning that was used was added to the dressing, and it wasn’t enough. I recommend adding salt and pepper to the diced potatoes to give this more flavor. I opted to leave the skin on the potatoes, but this can be left to personal preference.

Potato Pepper Salad

Ingredients:

  • 3 potatoes, cooked and cooled
  • 1 green pepper
  • 4 T vinegar
  • 2 T water
  • 1/4 tsp powdered sugar
  • 1/2 tsp salt
  • dash pepper
  • 2 T olive oil

Instructions:

  1. Dice potatoes into 1/2 inch cubes. Season with salt and pepper to taste. Remove seeds from pepper and chop it fine.
  2. Mix together vinegar, water, sugar, salt, and pepper.
  3. In a salad bowl, place a layer of potato, then a layer of pepper, and drizzle 1 T of oil over it. Repeat for a second layer. Then pour vinegar mixture over whole salad.
  4. Place in refrigerator for 15 minutes to let marinate.
